Happy Wednesday Friends! Whether you've got back to school on the brain, or preparing for fall festivities, these delicious treats are sure to please kids of all ages...
Chocolate and peanut butter! It's one of Ginger Grand's favorite combinations and I'll confess--mine too! I started with my kids' most requested chocolate cake. The recipe is on the Hershey's cocoa can:
2 c sugar 1 1/2 tsp. baking soda 1/2 c vegetable oil
1 3/4 c all purpose flour 1 tsp. salt 2 tsp. vanilla extract
3/4 c cocoa 2 eggs 1 c boiling water
1 1/2 tsp. baking powder 1 c milk
Combine dry ingredients in large bowl. Add eggs, milk and vanilla; beat on medium speed 2 minutes. Stir in boiling water. Batter will be thin. I use a cookie scoop to spoon into prepared mini muffin pans. Bake at 350 7-10 minutes.
These bite sized snacks are topped with a not so decadent frosting made with PB2. Have you heard of it? The peanuts are pressed to remove most of the oil and fat. I use it for smoothies, so I thought I would try it in frosting. You can read more about it, nutrition and recipes here. For a light, fluffy frosting I mixed 1/2 c PB2 with 1/4 c almond milk and 2 cups of confectioners sugar. I used a pastry bag for frosting and...

I guess my Mr. Z. would fit into the category of 'kids of all ages" because he would love those. Maybe I could get him to try the PB2 for less calories. Looks really good Cecilia.
