Chocolate and peanut butter! It's one of Ginger Grand's favorite combinations and I'll confess--mine too! I started with my kids' most requested chocolate cake. The recipe is on the Hershey's cocoa can:
2 c sugar 1 1/2 tsp. baking soda 1/2 c vegetable oil
1 3/4 c all purpose flour 1 tsp. salt 2 tsp. vanilla extract
3/4 c cocoa 2 eggs 1 c boiling water
1 1/2 tsp. baking powder 1 c milk
Combine dry ingredients in large bowl. Add eggs, milk and vanilla; beat on medium speed 2 minutes. Stir in boiling water. Batter will be thin. I use a cookie scoop to spoon into prepared mini muffin pans. Bake at 350 7-10 minutes.

These bite sized snacks are topped with a not so decadent frosting made with PB2. Have you heard of it? The peanuts are pressed to remove most of the oil and fat. I use it for smoothies, so I thought I would try it in frosting. You can read more about it, nutrition and recipes here.
