Happy Monday, Friends! Want to whip up a bite-sized dessert that's decadently delicious? As promised when I posted my seasonal tray and table decor last week, today I'm sharing my recipe for these mini chocolate cheesecakes with just a hint of caramel...
Here's what you'll need:
*8 oz cream cheese
*1/3 cup sugar
*1 egg * 1 teaspoon vanilla
*1/2 cup chocolate chips melted
*vanilla wafer cookies for crust
*La Lachera caramel syrup garnish
First: Line a muffin tin with cupcake liners. Next: Add a vanilla wafer to each liner and melt the chocolate chips. Then: Blend the cream cheese, sugar, egg and vanilla, adding the melted chocolate last. Last: Spoon into muffin tins and bake at 300 degrees for 20 minutes.
Allow to cool completely and refrigerate for at least two hours before serving. Garnish by drizzling with La Lachera caramel. Enjoy!

ReplyDeleteCecelia, About how many does this recipe make? I realize it depends on how generous you are with the batter. Will it make 12? I have some gluten free vanilla wafers; I want to try this recipe for my gluten intolerant SO! No caramel as it often has flour, but chocolate works in THIS household. Thanx!
