Happy Monday, Friends! It's Girl Scout cookie time again and today I'm sharing a healthier version of the classic favorite--thin mints! This recipe uses fewer ingredients, makes two dozen cookies for half the price, and you probably already have the ingredients in your pantry

Cookie ingredients:
1 1/4 cups flour (almond or all purpose)
1/4 cup dark cocoa powder
1/4 teaspoon salt
3 tablespoons coconut sugar or maple syrup
2 tablespoons melted coconut oil
1/2 teaspoon peppermint extract
parchment paper
Dark chocolate coating:
3/4 cup Special Dark chocolate chips
2-3 tablespoons coconut oil
1/4 teaspoon peppermint extract

Start by blending the cookie ingredients to form dough. (If the dough is too dry, water or additional coconut oil can be added sparingly.) Allow the dough to chill for 30 minutes. Next, roll the dough on parchment paper, 1/4"-1/2' thick and cut with a small round cookie cutter. Repeat to use all of the dough and bake on a parchment-lined pan at 300 for 8-10 minutes. Do not over bake!

Then, while cookies are cooling, melt the chocolate chips and coconut oil at 30 second intervals in the microwave before adding the peppermint oil. Last, use a spoon to dip cooled cookies into the melted chocolate, place on wax or parchment paper-lined pan and chill in the refrigerator until the coating hardens. Note: Like the original, they are best stored in the fridge! Enjoy!
