15 Minute Chocolate No-Bake Eskimo Cookies


Happy Wednesday, Friends! Wow, has it been hot here! I know some of you are beginning to think about fall recipes but I wanted to sneak in one more summery dessert. Today's 15 Minute Fix  is a quick and easy no-bake cookie recipe that's a family favorite...and yes, there is chocolate under that powdered sugar!

When Dear Firstborn was a teenager, she brought home this recipe from a friend's house. The copied recipe noted that it had been adapted from a 1950s children's cookbook, though it didn't mention the name. DF made a batch as soon as she brought it home and chocoholics that we all are, it quickly became a favorite. In addition to being simple and not needing to be baked, you probably already have the ingredients in your pantry. Here's what you'll need:

  • 3/4 C softened butter
  • 3/4 C sugar
  • 1 1/2 t vanilla 
  • 2 C quick cook oatmeal
  • 3 T cocoa
  • 1 T water 
  • 1/3 C powdered sugar


Start by blending the butter, sugar and vanilla.

Next, stir in the cocoa and water until well blended.

Last, add the oatmeal and stir until it is coated with the chocolate mixture.

Roll the mixture into small balls, place them on wax paper and allow to chill in the freezer before rolling in the powdered sugar. Once they have been coated with powdered sugar, keep them chilled until serving. {I actually store mine in the freezer.} Enjoy!

  3. If you store them in the freezer do they freeze hard? If so do you take them out and thaw before they can be eaten. Do you know how long they keep if refrigerated? Aprox. how many does this make. A lot of questions, I know :) Thanks for the receipe.

  7. In NH and Maine we call them no bake cookies but I have never seen them rolled in confectioners sugar before. Will have to try that. They are addictive. My version has peanut butter, and I figure with pb and oatmeal, it counts as healthy! Nuts or coconut addded ain't too shabby either! This recipes cooks the milk and chocolate a bit and I think that helps them harden up without the freezer. Storebought ones are HUGE! I like them cooky size although I have seen bite size ones, too. Will try your version.

  12. She's right! This is from a 1957 or 1958 child's cookbook. I had the book. I bought it through the Scholastic monthly book order in the classroom. I remember it well because it was my first cookbook and it was the start of my cookbook addiction! I remember these cookies very well.
