Happy Monday, Friends! Most of you have probably baked banana or zucchini bread, but have you ever tried sweet potato bread? If they're not your favorite, I encourage you to keep an open mind--the superfood is rich in Vitamin A and beta carotene and doesn't taste "yammy" at all in this sweet bread recipe...
Ingredients:
1 baked sweet potato
3 eggs
1/4 cup melted butter
1 tsp vanilla
2 Tbs honey
1/2 cup brown sugar
1 cup almond flour
1/2 cup wheat flour
1 tsp baking powder
1 tsp baking soda
2 tsp cinnamon
1 tsp ginger
1/2 tsp all spice
1/3 cup chocolate chips (optional)
1/3 cup chopped pecans
Start by baking the sweet potato. While it's cooling, melt the butter in a large mixing bowl. Blend butter with eggs, vanilla, honey, and brown sugar. Cut the potato in half and scrape it from the skin. Add to butter mixture and blend until creamy. Stir in dry ingredients and spices.
I couldn't resist adding chocolate chips to mine, but they're optional.
Sprinkle pecan pieces on top and bake in parchment paper lined loaf pans at 300 degrees for 25 minutes. (I used mini loaf pans.)
This recipe makes one regular loaf or 5 mini loaves. Wouldn't they make cute hostess or holiday gifts?

Oh, those melting chocolate chips just made me realize I was hungry. Without the chocolate, I would slather this bread with some whipped cream cheese! I think I am gonna make some of these for our church bazaar (and a few for gifts, too!). I have a plethora of mini loaf pans waiting to be used!
