Happy Monday, Friends! Today I'm sharing a chocolate chip banana oatmeal pancake recipe using homemade oat flour. They're nutritious, filling, and will satisfy your craving for sweets...
Here's what you'll need:
2 cups oatmeal
1 tsp baking powder
1 tsp cinnamon
2 mashed bananas
1 tsp vanilla
1 egg
1 cup chocolate chips
Whipped cream garnish
First: Grind 2 cups oatmeal into flour consistency, stir in baking powder and cinnamon. Next: Blend mashed bananas, egg, and vanilla.
Then: Stir in dry ingredients until mixture is smooth. Last: Add chocolate chips, and cook on a hot buttered griddle. They are plenty sweet without syrup but I like to garnish them with whipped cream. Enjoy!
This sounds great. I make my gluten-intolerant SO blueberry muffins with a similar combination of ingridients. Can I make oat flour with just my blender???? Several years ago I discovered canned whipped cream as an alternative to butter and syrup on my pancakes/French toast/waffles. I now prefer it that way!
