3 Ingredient Chocolate Covered Peanut Butter Balls

Happy Monday, Friends! If you love the yummy flavor combination of peanut butter and chocolate, check out this healthier dessert recipe for chocolate covered peanut butter balls. You only need three ingredients to whip these up in no time

3 ingredient chocolate covered peanut butter balls

This simple dessert can be stored in the freezer for a tasty frozen treat or chilled in the fridge depending on your preference. My favorite way to eat them is about five minutes after removing them from the freezer. Have you ever used PB fit? The organic powdered peanut butter is often used in smoothies because it has protein but is lower in carbs, sugar, and fat than peanut butter from the jar as you can see from the nutritional content in the second photo below.

Here's what you'll need:

1 cup PB fit blended with 1/2 cup water
1/2 cup dark chocolate chips melted with 1 tablespoon coconut oil
(Makes about a dozen.) 


Start by blending the PB powder and water until the mixture is creamy. Then roll into small balls, place on a wax paper lined tray, and place in the freezer for 15-30 minutes until they are firm to touch.

Next, while the peanut butter balls are in the freezer, melt the chocolate chips and coconut oil in 30 second intervals in the microwave. (The melted chocolate will appear thin, but it will thicken as it cools.) Last, use a spoon to dip the peanut butter balls in the melted chocolate until they are completely coated, placing them back on the wax paper to harden. TIP: I like to freeze mine in portions.
