Happy Monday, Friends! Can you believe it's August already? Since it's still hot, hot, hot, here in Texas , I love making salads for dinner. This delicious caprese tortellini really hits the spot and it's super quick and easy to prepare...
Here's what you'll need:
1 package cooked tortellini
1 pint grape tomatoes
6 oz mozzarella pearls
1/2 cup cut basil
Balsamic vinegar glaze
Salt and pepper to taste
Start by slicing the tomatoes and mozzarella pearls in half while the water for the tortellini is boiling. Next, cook, rinse, and drain the tortellini.
Then, use herb snips to finely cut the basil. Last, add tomatoes, mozzarella, and basil to the cooled tortellini, season with sea salt and coarse pepper, and drizzle with balsamic glaze. Chill for several hours before serving. Bon appétit!
