Happy Wednesday Friends! Today I'm sharing a tasty, healthy pumpkin recipe that doesn't require flour, eggs, or butter and contains only a little sugar--really!
Awhile back, I found this Mini Cupcake Baker at a yard sale. It was still in the box and didn't appear to have ever been used. It's very convenient--just plug it in to bake your goodies and wipe it out when you are finished!

I love cupcakes but also wanted a healthier option. Whenever I can, I try to use oatmeal in baked goods for its many nutritional benefits including cholesterol fighting antioxidants. Pumpkin is another great source of antioxidants. My local grocery store carries a wonderful organic canned pumpkin that I use in my hummus. Since I had a can in my pantry, I decided to experiment and here's the recipe that resulted:
Combine one large smashed banana, 3T organic canned pumpkin, and 1/4 t cinnamon. Stir in one cup of oatmeal and add 1T water. Batter will be lumpy like this:
Did you notice the special ingredient I added last? 1/3 c butterscotch chips adds a slightly caramel flavor that makes our mostly healthy concoction just right! The handy dandy baker only takes about seven minutes or...
...bake in the oven at 350 degrees for 7-10 minutes. This recipe makes 12 minis, so double up if you need more. I like them best warm!
