Greetings Friends! As promised on my Easter Tea post, today I am sharing my recipe for tea cakes...
I have started substituting monk fruit in the raw for half of the sugar in baked goods. You can read more about it here. My recipe:
Cream:
1/2 c sugar
1/2 c monk fruit
5 T butter
2 T lemon juice
1 egg
Mix in the following dry ingredients, adding the thyme last:
1 1/4 c flour
1/4 t salt
14 t baking soda
1 t baking powder
2 T thyme
Bake in greased mini muffin tins at 350, 10-12 minutes. Cool slightly before removing from pan. I kept them "upside down" to resemble tiny cakes and glazed them while still warm.
Glaze:
1/3 cup powdered sugar
2 t culinary lavender
1 t lemon juice
1 T milk (almond milk)
Serve with tea or any occasion--I like them best warm ;)

ReplyDeleteOK. I'm going to make this. I LOVE and HAVE food grade lavender (loads of it) but not a lot of recipes for it. And my thyme is growing nicely in the garden. This is a winner.
