Happy Monday, Friends! It's already been in the nineties here, and I'm on a mission to make my own frozen treats. If you're a label reader like I am, you may have noticed ingredients you don't recognize. I've found homemade alternatives are healthier and definitely less expensive
Here's what you'll need:
1 cup Greek yogurt (I used Dannon strawberry cheesecake.)
1 1/4 cups chocolate chips
1 Tbsp coconut oil
Start by placing the bowl of yogurt in the freezer and continue stirring it every 10 minutes until it is the consistency to scoop. Next, use a cookie scoop to spoon the yogurt onto a wax paper lined pan and freeze until firm.
Then, while the yogurt scoops are freezing, add the coconut oil to the chocolate chips and melt in the microwave in 30 second intervals. Last, dip the solid scoops in the melted chocolate, place back on the wax paper, and return to the freezer until the chocolate hardens. Store in an air-tight container in the freezer and remove 10 minutes before serving. (Makes 13 fro-yo bites.) Enjoy!
