Hi there, Friends! Today I've got just the recipe to make a meal from your summer garden harvest--tomato pie! My recipe uses Greek yogurt instead of mayo and loads of fresh herbs for a satisfying taste that's both savory and sweet...
Here's What You'll Need:
3-4 sliced tomatoes
9" pie crust
1/2 cup Greek yogurt
1/3 cup cream
2 tsps each fresh basil and oregano
8 oz fresh water mozzarella pearls halved
1 cup grated mozzarella for topping
Start by salting and draining the sliced tomatoes. Prepare/bake a 9" pie crust. While the crust is baking, cut fresh herbs and mix with cream and yogurt. (I use herb shears to snip mine.) Pat dry any remaining moisture from tomatoes and layer them and half of the fresh water mozzarella on the pie crust. Cover with yogurt mixture, repeat tomato and fresh water mozzarella layer, and top with grated mozzarella. Bake at 350 degrees about 30 minutes until crust is golden and cheese is melted.
