Refreshing Rosemary Pomegranate Mocktail


Hi there, Friends! It may still be winter, but I'm looking ahead to warmer months. How about you? Once I start spending time in the garden, I'm always in search of new ideas for refreshing drinks. This festive rosemary pomegranate mocktail can be served at your Valentine's Day table and then enjoyed again as the weather gets warmer...

To make this refreshing beverage, start with rosemary simple syrup:
  • 1 cup water
  • 1 cup sugar
  • 4 sprigs rosemary {Need rosemary? Find it here!}

You'll also need: 

  • 1 tablespoon pomegranate seeds (arils) 
  • Sparkling water 
  • Rosemary garnish

Bring the water and sugar to a boil, then add the rosemary sprigs. Remove the mixture from heat and allow the rosemary to steep for 30 minutes. To avoid a medicinal taste, remove the sprigs promptly and strain the cooled syrup into a jar or decanter. This recipe makes about 1 1/2 cups of syrup and can be refrigerated for up to a month.

Fill the glass with ice and add 1 tablespoon pomegranate arils--the actual name of the pretty red fruit jewels that cover the white seeds inside, but more commonly referred to as pomegranate seeds. Next, add 1 tablespoon of rosemary simple syrup.

Last, fill the rest of the glass with sparkling water and gently stir with a rosemary sprig garnish.  Enjoy!
