Greetings Friends! As a salad lover, I love to try unusual combinations or mix up new varieties on a classic. There are two things that ruin a good salad for me. First, I dislike iceberg lettuce, period! Also, overdressing makes a perfectly good salad soggy and adds unwanted calories. My recent favorite has been my own version of the traditional Greek salad. This recipe is a large portion, as in my dinner, for one or could be a side salad for two.
Ingredients:
Secret Garden Herbs Dressing:
Mix the following ingredients in a mason jar, pour into a cruet and set aside.
1/2 teaspoon dried Thyme
1/2 teaspoon dried Oregano
1/4 teaspoon cracked pepper
1 Tablespoon roasted garlic vinegar
2 Tablespoons olive oil
Combine the following:
2-3 cups chopped Ruby red lettuce
1/4 cup Feta cheese
10-12 grape tomatoes
1/4 cup chopped celery
8-10 Kalamata pitted black olives
*Recipe including 1/2 of dressing prepared is 366 calories
Very sparingly add dressing, a drizzle at a time and toss salad. The key to crisp yumminess is to not over dress! It will be soggy if you use all that is mixed!
