Vegetarian Lasagna Rolls: Comfort from my Kitchen

Happy Monday, Friends! If you're an empty nester, have your cooking habits changed? I must confess that mine have. I don't daily make big meals like I used to when my three kids were at home, but today I'm sharing one of their favorites. Delicious vegetarian lasagna rolls may be meatless but they are quite filling...

Right around the time our extreme winter storm hit, Dear Firstborn mentioned that she was cooking lasagna rolls, a recipe I used to make often when the kids were younger. Although I occasionally bake lasagna for special occasions, I realized it had been ages since I made lasagna rolls, and I started craving them. Unfortunately, I didn't have the ingredients on hand and I added them to my grocery list, although it would be a good ten days before I could get to the store due to the weather.

Here's what you'll need:

12 cooked lasagna noodles
Ricotta cheese (15-16 oz)
Chopped black olives (Spinach can be substituted if desired)
Spaghetti sauce 
8 oz shredded mozzarella cheese
2 T chopped fresh oregano

To clarify, there aren't any bread/rolls involved in the recipe--the lasagna noodles are "rolled" individually instead of layered. While the noodles are cooking, combine the ricotta cheese, black olives, and oregano. I don't recall where I got the original recipe, but it called for spinach in the filling. Over the years, I started using chopped black olives and herbs, because they complement the ricotta so nicely.

After the noodles are cooked, drain and pat them dry, drop about 2 T of filling on each, and roll them up. Cover with sauce, shredded mozzarella, and additional oregano if desired. Bake at 350, 20-30 minutes, until the cheese is bubbly. Enjoy!

  2. That melted cheese got me salivating! I used to make a similar recipe mixing frozen chopped broccoli in with the ricotta and spreading it the length of the noodle. I put meat in my sauce for the flavor and protein. One noodle was a meal! My SO doesn't like cooked greens like spinach so broc works well. Wish I could find a gluten free lasagna noodle! His gluten intolerance and diabetes has me cooking differently!
