Easy Peasy Eggnog Cookies with Just 3 Ingredients and Creating Christmas Features


Happy Wednesday, Friends! During this week between Christmas and New Year's celebrations, I'm still enjoying holiday goodies and every season I like to try something new. I love eggnog at Christmas, but a little goes a long way for me. Last year I used my leftovers to make eggnog French toast and it was so simple and tasty that I made it again this year. During the holidays, I always make homemade fudge. However as far as cookies go, since my kids were were more into the decorating with icing and sprinkles part, I learned to simplify by keeping a few rolls of cookie dough on hand. So...with an extra roll of sugar cookie dough in my fridge and inspired by last year's new recipe, I decided to flavor some icing with eggnog.

To make this simple recipe, bake the sugar cookies as instructed. While the cookies are cooling, mix 3 tablespoons of eggnog with 1 1/2 cups of powdered sugar, for every dozen cookies. {I don't usually bake the whole package at once, but if you do, just double the recipe.}

The icing will be a thinner consistency than buttercream, but the subtle eggnog flavor really complements the sugar cookie. If desired, sprinkle lightly with cinnamon or nutmeg.  Enjoy!
