Happy Monday, Friends! In the summer, I eat lots of salads and I prefer make-ahead recipes I can pull out of the fridge at a moment's notice. If you love pasta but also want to increase your protein, this tortellini salad provides the best of both

The recipe really couldn't be easier. Start by preparing, draining, and cooling a 19 oz package of tortellini. Next simply combine the following:
*2 cups grape tomatoes halved (2g))
*2 cups julienne cut fresh spinach (10g)
*1 cup each cannellini beans (14g) and lentils (18g)
*1 cup fresh mozzarella pearls halved (20g)

Last add the tortellini (36g) and even more protein with this creamy cilantro lime dressing, (23.5g) garnish with sliced kalamata olives, and chill until ready to serve.

Makes 4-6 servings depending on whether you eat it as a meal or as a side dish.

A side portion like the one above includes 20.58 grams of protein while a meal portion packs 30.88 grams of protein! Enjoy!
