Happy Monday, Friends! I'm always looking for foods to boost my protein so after Dear Firstborn shared this yummy recipe with me, I decided to share it with you! It's delicious in salads, as a garnish for tacos and quesadillas, or as a dip. You only need several ingredients to whip it up in minutes

Have you noticed the number of ingredients in bottled salad dressings lately? I've been making my own because it's healthier and also saves money.

Ingredients:
Cilantro bundle
1/4 cup lime juice
1/4 teaspoon green ancho chili spice
3/4 cup Greek yogurt
1/4 cup cottage cheese
Blend together ingredients until creamy and chill. Store in a covered glass container for up to a week and stir before each serving. TIP: To make dip instead of dressing, use lightly less lime juice and add more Greek yogurt for desired consistency. Also, I do not recommend using low fat Greek yogurt or cottage cheese as they usually have significantly less protein.
