Happy Monday, Friends! I concocted a new recipe over the weekend and if I say so myself, these healthy pancakes are scrumptious! Plus you only need three ingredients that you probably already have in your pantry

Ingredients:
1 1/2 cups cooked or leftover oatmeal (I use Bob's Red Mill Old Fashioned Oats.)
2 grated apples (I didn't peel mine.)
1 teaspoon cinnamon

Leftover oatmeal would also be perfect for this recipe. I actually used oats strained from making homemade oat milk (plain, not chocolate!) which have a similar consistency to cooked oatmeal. Simply blend the oatmeal, grated apples and cinnamon and drop onto a hot buttered griddle.

These take a little longer to brown than pancakes made with flour, so be patient before flipping. 😉 Brown until golden on both sides and drizzle with maple syrup before serving. Enjoy!
