Pear Muffins with Homemade Fruit Glaze

Happy Monday, Friends! Pears are in season and I've got a scrumptious muffin recipe for you today. They are topped with homemade fruit glaze and are so yummy! Plus, you won't need any eggs or flour

Ingredients: 

Muffins: 
Recipe makes one dozen.

1 1/c cups grated pears
1 teaspoon vanilla
2 tablespoons melted butter
1/2 cup coconut sugar 
1 cup oats
1 teaspoon baking powder
1/2 teaspoon baking soda
1 teaspoon cinnamon
Optional: walnuts for topping

Fruit Glaze
1/2 cup pear juice (drained from grated pears)
2-3 cups confectioners sugar

Start by peeling and grating the pears, draining the juice to set aside for the fruit glaze. Next blend the melted butter, vanilla and sugar and add the mixture to the pears. Then combine the oats, baking powder, baking soda, and cinnamon and blend with the pear mixture. Last pour into muffin tins, top with walnuts, and bake at 350 for 30 minutes. 

For the glaze: Combine pear juice and confectioners sugar to desired consistency while the muffins are baking. Cool muffins thoroughly before drizzling them with glaze. Enjoy!
